The Lazy Girls Cake

The lazy girls cake is perfect if you want cake but don't want to spend an hour baking it and then have all the washing up to deal with after! I want the fun of baking but I don't want all that to spoil my fun because to be honest I am a lazy girl! I'm also a massive sweet tooth kind of girl, cake is the best! The perfect thing for me is a mug cake! What's a mug cake I hear you cry? It's a cake in a mug, cooked in a microwave in 2 minuets! YES, you did read that right! It's cooked in 2 minuets! That means in total you could spend 5 minuets making and baking - with a lot less washing up to do!! A spoon and a fork or mini whisk is all that will need washing after!

What You Will Need

2 tablespoons of soft butter

1 tablespoon of cocoa powder

1 medium egg

3 tablespoons of caster sugar

2 table of self-raising flour

Pinch of salt

Mini marshmallows

Biscuits

Whats great about this recipe is no proper measuring, no scales needed!

Method

Place the butter in your mug and microwave for 10-20 seconds until it has melted

Stir in the cocoa powder until it is combined with the butter then add the egg and sugar then beat together until it's all comes together

Once that's ready add the flour and salt and beat until the mixture becomes smooth.

At this point you can add your marshmallows and biscuits and mix it into the mixture then top it off with more marshmallows and biscuit!

Cook in the microwave fror 2 minuets 20seconds @ 600W, 2 minuets @ 800W or 1 minuet 40 seconds @ 1000W.

And then that's your mug cake ready to eat! Personally I'd eat it whilst it's still warm for best results!

You can try all different variations of this this with raisins or different types of biscuits like cookies and is perfect for those cosy nights in for the festive season!
